Origin & production
From Cabacés (Tarragona), in the heart of the Montsant mountain range Natural Park, this oil carries the Siurana Protected Designation of Origin (PDO), a guarantee of authenticity and prestige. The Arbequina variety is grown under Certified Organic and Biodynamic methods, in a sustainable grove with a negative carbon footprint and low water use. Calcareous soils and a Mediterranean climate, with mild winters and hot summers, give the fruit a balanced, elegant personality.
Harvest & process
The 2023 harvest was carried out by hand during the first half of October, at the optimal ripeness point (index 1–2), when the olive turns from green to yellow. This moment ensures maximum concentrations of antioxidants, polyphenols, tocopherols and maslinic acid. Production takes place in a two-phase mill, with settling and filtration before cellaring, where the oil rests under controlled humidity and temperature until it is bottled to order.
Tasting note
Distinguished by a green fruity profile with vegetal notes of tomato plant, artichoke, fennel, banana, walnut and green almond. On the palate it is fresh, balanced and elegant, with a fluid passage free of astringency and a light peppery aftertaste that enhances its complexity.
